Chardon is a restaurant-wine bar located in the old center of Arles. Its particularity: it welcomes chef-travelers for a residency of a few weeks or a few months.
Restaurant open to the world
Nomadic chefs for three years in the kitchens of Montreal, New York, Kyoto, Barcelona, Fez or London, Harry Cummins and Laura Vidal settled on in Arles to open a restaurant designed as a pied-à-terre where they can officiate or pass the ball back to their chef friends from around the world by welcoming them in turn.
Chefs in Residence
In 2017, after Canadian-Trinidean chef Kyle Vaughn Roericket in February and March, Chardon welcomes Mal Meiers and Kate Christensen from April to June, two young Australians engaged in a nomadic and ephemeral catering project. There is only one constant between the different chefs: the almost exclusive use of local products and a service of small plates to share at an affordable price (between 6 and 20 euros per plate).
French and local wines
Set up by Laura Vidal, the wine list travels throughout France but gives pride of place to local winegrowers. The young Quebecer, former sommelier of the Parisian bistro Frenchie, has notably selected two estates in Costières de Nîmes:Domaine Marc Kreydenweiss (“the Perrières vintage, elegant and mineral, really cracks me up”) and the Domaine Terre des Chardons (“Chardon Marie is one of our rosés but I also like the whites, atypical and very pretty with their notes of bitter almond”).
