Member of the CrocoTeam, Vincent Vergne is one of the ten best cheesemakers in France according to Gault & Millau. In Nîmes, you can meet him at Les Halles market or in his shop on Avenue Georges Pompidou, a place full of smells and colors which contains no less than four maturing cellars and where you will also find some beautiful bottles. Also, we asked him for some ideas for cheeses to serve with Costières de Nîmes wines, one idea per color.

RED
Tomme des vendangeurs + cuvée Excellence du Mas des Bressades
“Every fall, I prepare a tomme des grape harvesters which is a cow’s tomme matured in Syrah must. The cheese is impregnated with the marc. It’s delicious with a red wine such as the Excellence cuvée from Mas des Bressades.”

WHITE
Navette de Nîmes + cuvée Vieilles Vignes du Château de Nages
“To stay local, I would recommend serving a navette of Nîmes, which is not a biscuit (navette is the name of a provençal biscuit) but a goat’s cheese that I refine in savory according to the ancient Mediterranean tradition, with the Vieilles Vignes cuvée from Château de Nages. The two go together perfectly: the white grenache recalls the nutty taste of goat cheese while the viognier brings all its floral dimension.”

ROSÉ
Sarrietton + cuvée Rosé du Mas Carlot
“There is a little-known cheese but that I love because it reminds me of my childhood… and it is very good! It’s sarrietton, a goat’s cheese made from raw farm milk that is produced in the borders of Ardèche and Gard, between Les Vans and Saint-Ambroix. It goes very well with a rosé such as the eponymous cuvée from Mas Carlot.”
