The connection between Costières de Nîmes and Norman Foster? Le Ciel de Nîmes of course, the restaurant at Carré d’Art, a building designed in the early 90s by the architect of the Millennium Bridge and the Millau Viaduct.

The view
We are at the very top of the Carré d’Art, a contemporary art museum with a library, and just opposite the Maison Carrée, which appears below. Suffice to say that the name of the place – Le Ciel de Nîmes – is not usurped. Here, the view takes in the roofs of the entire old town and you float as if in weightlessness.

The spirit
Nîmes chef Jérémy Paes took over the restaurant in 2013. Today, authentic cuisine with a southern temperament is served there. The wine list is regional and Costières de Nîmes is at the top of the list.

Chef’s advices
Finally, two proposed agreements with Costières de Nîmes, signed by chef Jérémy Paes : un duck breast with figs with Prestige red from Château de Valcombe “for its jammy side” or a leg of lamb buttered with black tapenade with the vintage Les Perrottes du Domaine de Poulvarel, chosen because “it’s a wine with body”.
