Domaine des Escaunes, Sernhac
Having worked in the kitchens of Joël Robuchon (La Table, L’Atelier) and returning from a six-year trip to Africa, the chef recently settled in the kitchen at Domaine des Escaunes, a former coaching inn transformed into a four-star hotel and located in the heart of the Saint-Roman terroir, in the northern part of the Costières de Nîmes AOC area.
He delivers seasonal cuisine, according to the daily market, with a resolutely southern bias. As for the wine list, the references are mainly regional, from the Gard and the Rhône, with several bottles in AOC Costières de Nîmes. Chosen with the head waiter, Yoann Daugan, here are three suggestions for meat lovers who like to indulge even in summer.
Domaine de Poulvarel, Les Perrottes (40 % syrah, 40 % grenache, 20 % carignan)
