The place
A room with depth, and a decor that gives pride of place to raw materials: parquet flooring, open stainless steel kitchen, wooden and metal chairs, wooden benches and benches, tables topped with a thick wooden top. The clientele is rather heterogeneous, even if the bulk of the troops are between 25 and 40 years old. Just like the staff, actually.

La carte
“Hamburgés”, as they say at Big Fernand, made from fresh, home-cooked products. Same for fries. The bread comes from Maison Villaret, a bakery created in Nîmes in 1755. The sauces were designed by Thomas Boutin, the chef of Vieux Crapaud, a brasserie in western Paris. There is even a local “hamburgé” being prepared: we are looking out for bull meat and brandade-based sauce. In the meantime, the best-seller is called Bartholomé. The composition: beef, Savoie Raclette with raw milk, smoked pork belly, candied onions, chives. And a BB sauce and a cocktail sauce to top it all off. The price: from 12 euros.

The wine
Happy surprise: here, we drink Costières de Nîmes in three colors. The manager, Matthieu Bataille, and his team spent a whole day at Château de Valcombe, in the very south of the appellation. Accompanied by Nicolas Ricome, the winemaker, they visited the vineyard and learned how to taste. “Usually, we recommend the red Tradition vintage from Château de Valcombe for most of our hamburgers, like the Bartholmé,” explains Matthieu Bataille. There is balance and a nice length on the palate. But we also offer white or rosé on Lucien, our vegetarian hamburger made with mushrooms and dried tomatoes. »
